Nose: The first thing you discover is a sweet caramel aroma, followed by a warming allspice lift, a sprinkling of citrus and a hint of oak.
Taste: It offers caramel and allspice which together present an excellent flavor as the mildly silky liquid crosses the tongue. The allspice remains for a longer caramel finish

History
Charles Mortimer Dedman took the wise decision to found the Kentucky Owl Bourbon distillery in 1879 by the banks of the Kentucky River, at Salvisa east of Louisville, south of Lexington at Oregon's Landing. The phrase 'The Wise Man's Choice' first appeared on the early Kentucky Owl labels, as it was coined from Charles Dedman's own selling recommendation. Today it is hand-picked and blended by our Master Blender, John Rhea.

Kentucky Owl, The Wiseman's Bourbon, was founded in 1879 in Mercer County, Kentucky by a local pharmacist, Charles Mortimer Dedman.
Kentucky Owl distillery flourished for over 37 years, until Prohibition, put an end to the business. In 1916 , as Prohibition loomed, 250,000 gallons of Kentucky Owl Bourbon was confiscated by the US Government and shipped up the river by barge to the state capital in Frankfort for "safekeeping" in a warehouse. One dark night, so the story goes, that warehouse full of precious Kentucky Owl mysteriously burned to the ground. The mysterious part is that the warehouse had apparently burned down in just a few hours when a warehouse full of whiskey should have burned for days. It is rumored that Kentucky Owl did not burn at all, but was spirited away by Al Capone or other interests to fuel the demand for good bourbon in Chicago late night speakeasies. The value of the bourbon lost today would be valued at $40 Million.
