While tequila is widely available globally, Mezcal is in another league and is being sold in very small quantities; there is no industrial production for this special liquid. Almost 100% of all mezcal production is craft production, using traditional production methods - the tahona wheel and lots of manual labour. Mezcal is pure traditional drink from rural Mexico. the purest you can get in terms of authenticity and historical production traditions, passed on from generation to generation. It has the closest connection with people, who have been hand-making it for years, according to their own traditions and know-how. it is the purest expression of the drink, revealing the core, the soul of Mexico.

Rooster Rojo Mezcal is made using traditional underground ovens to cook the agaves. copper pot stills, sealed with local clay are used for the distillation of this precious artisanal liquid. Open wooden vats, covered with agave fibres, are used for fermentation.

Rooster Rojo Mezcal is handcrafted by Lopes Sosa Palenque, a small craft distillery in San Juan del Rio of Oaxaca, in Mexico. Each bottle is signed by the Maestro Mezcalero (the master mezcal maker) Rodolfo Lopez Juan which confirms that he has been following the correct production processes and signifies his approval that this liquid is perfect for Mezcal aficionados around the world. the bottle is dark, similar to traditional clay bottles.

The purpose of this is to prevent the liquid being affected by direct sunlight and to ensure it is not visible to the 'bad eye' before consumption. This is traditional Oaxacan belief.
